    Rice

    After wheat, rice is the most consumed cereal in the world, more than half of the world population, in fact, eats rice. About 90% of the production is concentrated in the East and there are many varieties, grouped according to the type of grain. From the East to Europe at the beginning of the eighth century thanks to the Arabs, who brought it to Sicily around the eleventh century. But it was the next century that the consumption of rice definitively affirmed due to the great famines, wars and epidemics of that time. The first evidence of Italian rice fields, created by Ludovico il Moro with the help of his brother Galeazzo Sforza, can be found in Lombardy and Piedmont and dates back to the end of the 15th century. Over the centuries, Italian rice became a real culinary institution, whose economy was subsequently developed and enhanced by Camillo Benso Conte di Cavour.
