    Timilia (also called in the dialectal forms tumminia, timminia, trimminia), was already cultivated in the Greek period and known as trimenaios, that is, quarterly cycle wheat. It is an ancient variety of durum wheat with a short cycle (head about 180 cm high) rather resistant to drought that does not need much water. It is processed by means of ancient stone mills and is highly digestible, thanks to the low gluten content. Goethe describes it as โ€œa precious gift from Ceres, at first it shows a very delicate leaf, then it grows like wheat and finally gains a lot of strengthโ€.
