Contrary to what the name would suggest, Buckwheat is not a cereal but an annual herbaceous plant, belonging to the Polygonaceae family. There are two hypotheses on the origin of the name: the first attributes it to the color of the Saracens' skin as it is dark, the second because it was widespread in Italy by the Saracens. It differs from common cereals for the high biological value of its proteins, which contain the eight essential amino acids in optimal proportions. With remineralizing and energizing properties, as it has high levels of magnesium and manganese, Tortiglioni are also a tasty alternative to a gourmet first course.
