The first evidence regarding the production in Sardinia of Lorighittas, a particular pasta shape made from durum wheat semolina mixed and worked with water and salt, dates back to the 16th century. Their name derives from a dialect term used to indicate the earrings or rings to which the heads of cattle were tied. What makes Lorighittas unique is their intertwined ring structure made during the long production process.
