    The first historical record that sees the preparation of pasta cooked by boiling in water belongs to the Arabs, who probably introduced it during the conquest of Sicily. Already in the sixteenth century A.D. every town in the Kingdom of the Two Sicilies had a large number of pasta makers, who left their products to dry in the sun during the summer, taking advantage of the sunniest positions.
